Summary This position is located at Dewey's within the Morale, Welfare and Recreation Department (MWR) aboard Naval Air Station Jacksonville, Florida. The purpose of this position is to prepare and cook a variety of foods in quantity, using standard or complex recipes to provide quality food. Duties also consist of operating and driving a food truck to support mobile food service operations. Responsibilities General (Duties include but are not limited to): Using a full range of quantity cooking procedures from common or frequently used to new or difficult recipes, prepares a variety of meats, poultry, seafood, vegetables, sauces and gravies. On a daily basis, prepares four or more menu items for one meal, which involves planning and coordinating a variety of steps to ensure that all items are ready for serving at the same time. In addition, may prepare menu items using special or difficult recipes involving many steps, ingredients or long preparation time in preparation of catered or special events. Estimates consumption of food items and places orders for food and other operating supplies. Ensures proper receipt and storage of inventory. May be asked in conjunction with the manager to cost and price menu items. Responsible for the proper storage, refrigeration and labeling of food in accordance with sanitation regulations at all times. Responsible for ensuring the kitchen area, equipment and food preparation areas are cleaned and maintained in accordance with sanitation regulations at all times. Ensures trash is removed continually as needed. May direct the work of lower graded cooks and/or food service workers in the timely preparation and delivery of food and the proper cleanliness of the work area and equipment. Performs other related duties as assigned. Food Truck Operator Duties: Drives the food truck to assigned locations and events in a safe and timely manner. Conducts pre- and post-operation vehicle inspections, ensuring compliance with safety and sanitation standards. Sets up and breaks down the food truck for daily operations, including connecting power, water, and waste systems if applicable. Takes customer orders, operates the point-of-sale system, and handles cash or electronic payments. Provides courteous and efficient service, addressing customer concerns or questions promptly. Maintains cleanliness of the food truck, including cooking surfaces, equipment, and storage areas. Ensures compliance with health codes and sanitation regulations during food preparation and service. Loads and unloads supplies and food items from storage areas to the truck as needed. Completes required logs, checklists, and reports related to food safety, maintenance, and vehicle use. Reports equipment malfunctions or vehicle issues to appropriate personnel. Performs other related duties as assigned. Specialized experience must demonstrate the following: This position requires skill to plan, coordinate and time sequence steps needed to prepare food on time without overcooking or waste. Must have the ability to adjust recipes for servings required: ability to recognize characteristics of food in deciding that raw materials are fresh, and judge food by color, consistency, temperature, odor, and taste. Demonstrated experience and/or training in preparation of large quantities of food in an industrial or restaurant setting. Must possess basic reading, writing and math skills to read and interpret complex recipes and compute changes required to increase/decrease the number of portions. Basic knowledge of food preparation principles and a practical understanding of the physical changes that occur during the processing and cooking of food. Working knowledge of the planning process involved in cooking an entire meal including different preparation methods for various food items, the necessary time for cooking these different items, and how to schedule and coordinate preparation to produce a properly cooked meal on time. Ability to evaluate a variety of raw and cooked food items to ascertain their freshness. Knowledge of standard formulas used in yield testing. Knowledge of principles of food spoilage. food borne illness, and food safety. Practical knowledge of methods and procedures necessary for ordering. Issuing and storing food items in accordance with inventory and sanitation requirements. You will receive credit for all qualifying experience, including volunteer and part time experience.
