ESSENTIAL FUNCTIONS ?
Plan and direct the functions of administration and planning of the Food and Beverage division to meet the daily needs of operation.?
Develop, implement, and monitor schedules for the operation of all restaurants and bars to achieve a profitable result.?
Direct the outlet and banquet managers in establishing and achieving predetermined profit objectives and desired standards of quality food, service, cleanliness, merchandising and promotion.?
Regularly review and evaluate the degree of customer acceptance of the individual restaurants and banquet service. Recommend to management new operating and marketing policies whenever declining or constant sales imply dissatisfaction by the customers, a material change in the make-up of the customer market, or a change in the competitive environment.?
Review work procedures and operational problems to determine ways to improve service, performance, or safety.?
Monitor food presentation of food to ensure that food is prepared and presented in an acceptable manner.?
Establish standards for personnel performance and customer service.?
Investigate and resolve complaints regarding food quality, service, or accommodations.?
Monitor compliance with health and fire regulations regarding food service and building maintenance in lodging and dining facilities.?
Reviews invoices for products and services related to the department; analyzes variances and takes corrective actions?
Order and purchase equipment and supplies and ensure proper par levels are met.?
Organize and direct worker training programs, resolve personnel problems, hire new staff, and evaluate employee performance in dining and lodging facilities.?
Continuously evaluate the performance and encourage improvement of the personnel in the food and beverage department. Plan and administer a training and development program within the department which will provide well-trained employees at all levels and permit advancement for those persons qualified and interested in career development.?
Arrange for equipment maintenance and repairs and coordinate a variety of services such as waste removal and pest control.?
Monitor budgets and payroll records, and review financial transactions to ensure that expenditures are authorized and budgeted.?
Keep records required by government agencies regarding sanitation, and food subsidies when appropriate.?
Record the number, @type, and cost of items sold to determine which items may be unpopular or less profitable.?
Review menus and analyze recipes to determine labor and overhead costs, and assign prices to menu items.?
Estimate food, and other beverage consumption to anticipate amounts to be purchased or requisitioned.?
Establish and enforce nutritional standards for the program establishments based on accepted industry standards.?
Leads financial review with ownership on monthly, quarterly and annual basis
Establishes and maintains annual revenue and cost projections which are to be reviewed and revised on a quarterly basis,?which includes suggestions for increasing revenue and cost management.
Possesses the ability to communicate with all levels of personnel while protecting the interests of the Company.?
Develops and maintains effective communications between all operating departments including vendors.
Uses purchasing and inventory knowledge to track costs, transfers, waste, promo and forecasting in all revenue centers for food & beverage?
Monitors all purchases of materials and supplies?
Seeks alternative forms of advertising and promotion including but not limited to electronic marketing and communication (website, e-mail, Facebook, Twitter)?
Approves menus by consulting with GM, Controller and Chef; reviews potential food and beverage menus, evaluates past popularity of menu options and develops new menus based on trends?
Creates in-house personnel promo to encourage employees of the Company?
Creates and implements unique events to drive revenue every month?
Directs large annual events such as food donation?
Assists with developing menu for distribution?
Ability to manage change effectively?
Provides leadership that helps the Company achieve its overall performance and profit goals.?
Communicates the goals and objectives of the Company and inspires/empowers employees to achieve those goals?
Ensures that the vision and mission of the Company are supported by his/her actions?
Qualifications: ?
(2+) years experience as Assistant Food and Beverage Director in a 4- or 5-star property strongly preferred, with high volume distribution, large scale operations, banquet business, expertise in food and beverage operations, sales and revenue growth, inventory control, cost control, food preparation procedures, budgeting, forecasting and capital expenditures.?
Ten (10+) years experience in food and beverage management and supervision of employees in the hotel, banquet and/or restaurant industry, possess overall knowledge of current culinary trends, food quality and food and beverage preparation and presentation.?
Experience in standardizing recipes, plating and costing of menus?
College education or equivalent, hotel or business administration degree preferred. High School Diploma or equivalent required.?
Organizational skills to function effectively with attention to detail while meeting established deadlines.?
A good working knowledge of Microsoft Office productivity software (MS Word, Excel, Access, Outlook, etc.).?
Ability to establish guidelines for proper staffing to maximize efficiency and minimize labor costs.?
Perception and awareness of individual needs, the ability to handle all situations professionally and excellent interpersonal skills to deal effectively with guests, management and employees.?
Excellent organizational, multi-tasking, planning, written and verbal communication skills?
Work in a fast-paced, busy, and at times, a somewhat stressful environment.?
Maintain physical stamina and proper mental attitude and ability to deal effectively with guests, management, employees and outside contacts while working under pressure and meeting deadlines.?
Able to frequently move freely about the office, sit or stand for long periods and withstand various activities.?
Travel off property when representing the company?
Communicate effectively in English, both in oral and written form.?
Must have excellent interpersonal skills to deal effectively with all business contacts, maintain a professional, neat and well-groomed appearance adhering to company standards.?
Bilingual or multilingual ability helpful but not required.?

Ability to lift / carry 25 lbs. (frequently) and 50 lbs. (occasionally)

Ability to seize, grasp, turn and hold objects with hands
Push or pull weight ranging up to a max of 40 lbs.
Use dominant hand coordination for simple grasping, pushing/pulling and fine manipulation
Occasional environment exposures to cold, heat/smoke and water.
Occasionally kneel, bend, crouch and climb as required.
