Job Description:
The Manager of Full Service Restaurant (FSR) Program is a senior leader responsible for shaping, owning, and evolving the company's full-service restaurant strategy across a national network. This role has end-to-end accountability for the performance, profitability, and long-term sustainability of the Full Service Restaurant portfolio, with a clear mandate to strengthen results, improve consistency, and build a scalable program that delivers a differentiated guest experience.
The role leads all aspects of both proprietary full-service restaurants (owned, branded, and operated by the company) and third-party or tenant partnerships operated under national brands, requiring close collaboration with Operations and Real Estate.
This role is focused on setting direction and building durable program foundations-strengthening underperforming locations, applying full-service restaurant guidelines, and defining clear standards for menus, equipment, supply chain, and execution. Program delivery is achieved through close partnership with Operations, supported by strong cross-functional collaboration across Procurement, Marketing, Finance, Technology, Facilities, and Real Estate.
This role operates at director-level scope and accountability ; internal title alignment may vary based on organisational structure.
Key Responsibilities
Strategic Leadership & Program Development
Own the short- and long-term strategy for theFull ServiceRestaurant business, positioning the company as a category leader in full-service dining.
Own the development of scalable, profitable proprietary restaurant programs, including menu and offer design, product development, category management, supply chain strategy, equipment standards, and operating procedures.
Apply full-service restaurant best practices and benchmarking to address underperformance, improve guest experience, and strengthen profitability-particularly across borderline or underperforming locations.
Conduct regular assessments of program performance, operational capability, and in-market results,identifyingopportunities, risks, andrequiredcorrective actions.
Develop and present program strategies, business cases, financial models, and investment recommendations to senior leadership for approval.
Cross-Functional Collaboration
Partner closely with Operations to ensure programs are executable, clearly understood, and consistently delivered in the field.
Work with Facilities to define kitchen and equipment standards, preventive maintenance expectations, and lifecycle planning.
Collaborate with Marketing to develop compelling go-to-market plans that drive awareness, trial, and sales performance.
Partner with Technology and Finance toestablishsupporting systems, data models, reporting, and performance visibility.
Work with Real Estate to manage relationships with tenants and national third-party brands, supporting portfolio decisions and in-site strategies.
Operational Excellence & Compliance
Set clear standards for food quality, safety, reliability, and throughput across all proprietary programs.
Establish governance, training expectations, and review rhythms that support consistent execution without direct day-to-day operational ownership.
Ensure all programs meet required return on investment thresholds and align with broader business performance expectations.
Leadership & Relationship Building
Build and lead a high-performing team, including a Corporate Chef and Program Managers, capable of bringing differentiated food programs to market.
Foster positive relationships with internal collaborators, franchisees, and external partners.
Collaborate closely with peer leaders across Full Service and Quick Service Restaurant teams to ensure aligned outputs and a cohesive site-level offering.
Qualifications
Proven leadership experience in full-service restaurant or foodservice environments, ideally in multi-unit or corporate program roles.
Strong background in program and menu development, operational planning, and cross-functional leadership.
Demonstrated ability to balance long-term critical thinking with near-term commercial and operational priorities.
Strong financial competence, including experience building return on investment models, cases, and profitability assessments.
Excellent communication and stakeholder-management skills, with the ability to translate strategy into clear, actionable programs.
Preferred Experience
Experience with national or regional full-service restaurant brands.
Exposure to mixed operating models, including proprietary, franchised, or tenant-based partnerships.
Working knowledge of foodservice equipment standards, kitchen workflows, and food safety requirements.
Familiarity with marketing strategy and consumer behaviour in full-service dining.
Location & Travel
Required location: Cleveland, Ohio (Westlake).
Travel expectations are approximately 50% during the first 3-6 months , reducing to 10-20% ongoing.
