Job Summary
The Senior Beverage and Restaurants&Cafe Supervisor oversees all bar operations within the Dome and America's Center, ensuring efficient setup, service, and breakdown for all events. This position manages beverage logistics, staffing, and quality standards across multiple bar locations and large-scale events.
During non-bar events, the Senior Beverage and Restaurants&Cafe Supervisor also oversees daily operations of permanent food and beverage outlets to ensure consistent quality, cleanliness, and guest satisfaction.
This role requires a proactive, hands-on leader with strong organizational skills, attention to detail, and the ability to manage multiple teams in a high-volume, fast-paced environment. Will provide direction to other supervisors as needed.
Essential Duties and Responsibilities
Act as a key liaison between Beverage Operations and other departments.
Lead pre-event meetings to communicate assignments, expectations, and event details.
Support new setups and operational planning for major or specialty events.
Provide ongoing feedback to management regarding staffing, training, and operational improvements.
Plan and execute setup and breakdown for all bar locations, including fixed, portable, and specialty bars.
Prepare detailed bar setup sheets, layouts, and par levels for each event.
Ensure all bar equipment and supplies are clean, functional, and in place before event start.
Coordinate with Concessions, Culinary, Warehouse, and Operations teams to ensure product and equipment delivery.
Supervise post-event breakdown, ensuring all items are cleaned, stored, and accounted for.
Manage beverage logistics for large-scale events such as conventions, concerts, and sporting events.
Oversee daily operations of restaurants, cafés, and permanent concessions during non-bar events.
Ensure consistency in product presentation, quality, and guest service standards.
Monitor staffing levels and adjust to meet operational needs.
Verify completion of opening and closing checklists and uphold cleanliness standards.
Partner with culinary and operations teams to maintain readiness and compliance.
Support cash handling, inventory management, and accurate sales reporting.
Supervise bartenders, barbacks, and restaurants&café staff during setup, service, and closing.
Train and coach staff on responsible alcohol service, cash handling, and guest service expectations.
Assign work areas, monitor performance, and ensure accountability for all shift duties.
Address issues promptly, reinforcing performance standards and corrective actions as needed.
Ensure that all closing tasks are completed before staff dismissal.
Oversee product counts and inventory reconciliation before and after each event.
Collaborate with Warehouse and Accounting teams to document product usage and waste.
Maintain accurate par levels and monitor pour control to reduce loss.
Ensure proper setup and closeout of POS systems, cash drawers, and credit handling.
Prepare post-event reports summarizing performance, variances, and improvement opportunities.
Enforce adherence to local liquor laws, ServSafe standards, company policies and Core Signatures.
Maintain a clean, organized, and safe work environment for staff and guests.
Monitor guest consumption and staff behavior to ensure responsible alcohol service.
Conduct walkthroughs to identify and address safety or compliance issues.
Requirements
1-2 years of bar management, food&beverage supervision, or event operations experience.
Proven leadership and team management skills in high-volume environments.
Excellent organizational and communication skills.
Working knowledge of alcohol service regulations and inventory control.
Proficiency in POS systems and basic computer applications.
ServSafe Alcohol certification.
Must be available to work evenings, weekends, and holidays according to event schedules.
Ability to stand, walk, lift, and carry up to 50 lbs for extended periods.
Must be able to move across large event spaces and back-of-house areas safely.
Exposure to hot/cold environments.
Potential exposure to loud sounds/environments.
Other duties as assigned.
