ASM Global, the leader in privately managed public assembly facilities, has an excellent and immediate opening for a full-time time Assistant Concessions and Bar Operations Manager for ASM/Knoxville Civic Auditorium and Coliseum. This position is responsible for assisting in the daily management of the Food and Beverage Department at the Knoxville Civic Auditorium and Coliseum (KCAC) and Chilhowee Park and Exposition Center (CPEC) to include hiring, staffing, training, concessions, mobile carts, bar services, general event and back stage catering, culinary, catering sales, menu development, ordering, inventory, financials, reporting, budgeting & forecasting. The Assistant Concessions & Bar Operations Manager directs and coordinates the entire food and beverage operation by performing the following duties personally or through subordinate supervisors & serves as the direct supervisor for food & beverage staff. This position also fulfills the role of Food & Beverage Operations Manager in his/her absence.
Essential Duties and Responsibilities

Assist in the daily management of the food & beverage departmental operations and personnel.
Work with local non-profits for staffing of concessions points-of-sale.
Implement food and beverage controls established by ASM Knoxville leadership.
Foster and maintain positive client relations.
Supervise food and beverage operations during the entirety of events to ensure client satisfaction.
Hands on management and support of employees during the service of events as well as considerable interaction with clients and guests.
Oversee distribution of all products to concessions & bar outlets throughout the venues.
Assist with food, non-alcoholic beverage and bar orders to determine sufficient food and bar inventory is ordered weekly.
Maintain cost and quality control standards.
Along with the Concessions & Bar Operations Manager, ensure equipment maintenance requests are generated as needed.
Assist with scheduling team members via When I Work and creating staff assignments based on event needs.
Inspect and taste prepared foods to maintain quality standards and sanitation regulations.
Oversee processes to control loss prevention/spoilage & cost of sales.
Hold pre-shift meetings to give event specific information and instructions to the concessions and bar teams to set the tone for each event.
Responsible for stand inventory/stand sheets for each event and assist Concessions & Bar Operations Manager with fiscal reporting.
Manage daily concession and bar food and beverage compliance and service concerns such as Health Department regulations, TABC controls and alcohol beverage service guidelines and standards.
Support Concessions & Bar Operations Manager with menu development and market analysis for concessions and bar operations.
Work with Concessions & Bar Operations Manager to tailor food & beverage selection, pricing, merchandising and marketing based on group demographics & history and create bar and food specials as needed.
Assist with maintaining the POS database, ensure appropriate stands are assigned for each event and act as the account co-administrator.
Responsible for the overall direction and coordination of food and beverage units in conjunction with the Concessions & Bar Operations Manager. Carries out supervisory responsibilities in accordance with SAVOR/ASM's policies and applicable laws. Responsibilities include recruiting, interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees in conjunction with Human Resources; addressing complaints and resolving problems under the guidance of the Concessions & Bar Operations Manager.
Work with the Concessions & Bar Operations Manager to further support the ASM Knoxville SAVOR operation portfolio (Knoxville Civic Auditorium & Coliseum, Chilhowee Park & Exposition Center, Knoxville Convention Center & World's Fair Exhibition Hall).
Work with the venue Directors to support the needs of the clients for each event.
Maintain communication with the Client, General Manager, Assistant General Manager, Directors, Concessions & Bar Operations Manager, Concessions & Bar Leads, Catering Sales Managers and Event Managers during events.
Responsible for directing all ASM Knoxville concessions & bar personnel in accordance with HR Policy and established approved concessions and bar practices.
Fulfill the service for each Banquet Event Order (BEO) and Concessions Event Order (CEO) as outlined by the Director of Food & Beverage.
Oversee concessions and bar inventory management including rotation, organization and storage of product, and ensure all product counts are verified before, during, and after events for all ASM Knoxville venues.
Support goal for Health Department score of 90 or higher and manage the food safety processes and protocols for all concessions and bar storage and service.
Must be able to positively adapt to changes in the work environment, managing competing demands, frequent changes, delays, or unexpected events.
Understand and be able to describe concessions and bar menu offerings, packaging, and pricing to the team and guests.

Supervisory Responsibilities
Position is responsible for managing the KCAC and CPEC Food & Beverage staff and working with the Concessions & Bar Operations Manager to support all venue operations.
Qualifications

Education and/or Experience
Certificate or degree from an accredited culinary school, college or technical school preferred.
Minimum 2 years' experience in supervisory level position in Food & Beverage or equivalent combination of education and experience.
Previous experience in overall Food and Beverage operations, sales, inventory control, cost control and food preparation procedures.
Previous experience in food and beverage purchasing (Catering & Concessions), using inventory levels and sales forecasting.
Knowledge of current culinary and concession trends, presentation, and food quality.
Certification, Skills and Abilities
Food safety and health code compliant.
Maintain PCI Compliance certification.
TABC certified. Alcohol awareness certificate and training capabilities.
Must be able to adapt to changes in the work environment including temperature, sounds, and smells.
Must be able to execute amongst competing demands, frequent changes, delays or unexpected events.
Effectively present and respond to questions from top management, clients and public groups.
Ability to multi-task and establish priorities.
Strong orientation to customer service and ability to work with clients and staff members.

Must be able to pass criminal and credit background check.
Computer Skills
Computer skills including proficiency with Microsoft Office programs.
Knowledge of POS systems preferred; especially Clover systems.
Knowledge of Event Booking software preferred.
Other Qualifications
This position will work with limited supervision and will require the ability to interact with all levels of staff including management. Requires ability to work flexible hours, including nights, weekends, and holidays, in addition to normal business hours.
